  • Przemysław Bilski – Chef at Restaurant Pod Nosem. He has gained his extensive experience at the London restaurants - Zafferano and Locanda Locatelli, which have been awarded Michelin stars as well as at the restaurant in Copernicus Hotel in Cracow. In 2015 he received the award in the “Traditional Cuisine Chef” category by Gault&Millau Poland.

    He specialises in traditional Polish cuisine served in a modern way, using, among others, the sous-vide* cooking method.

    * sous-vide (French for "in vacuum") – a method of cooking, in which food is sealed in airtight plastic bags and cooked in a water bath for much longer than normal cooking times of up to 72 hours. The process, owing to lower cooking temperatures, allows for preserving the natural flavours and the highest quality of dishes.
